Creamy Corn Pudding Recipe

Ingredients:

2 1/2 cup corn
2 eggs, beaten
1 can evaporated skim milk - (12 oz)
1/4 tsp nutmeg
2 tbsp low-calorie margarine
2 tsp sugar
Salt, to taste
Freshly-ground black pepper, to taste

Instructions:
Preheat the oven to 350 degrees.

Combine all ingredients in a medium bowl and pour into a nonstick casserole
dish.

Bake for 45 minutes until the center of the pudding is set and the top is
light golden brown.

This recipe yields 6 servings. Serving size: 1/2 cup.
