Easy Bake Potato Bites Recipe

Ingredients:

2 medium baking potatoes, diced
1/2 red onion, diced
2 tbsp chopped or torn fresh cilantro or p
1 tbsp olive oil
1 dash freshly-ground black pepper
1/4 tsp salt

Instructions:
Heat oven to 375 degrees. Combine all ingredients in a small bowl.

Spread on a nonstick baking sheet and bake 15 to 20 minutes.

This recipe yields 2 servings. Serving size: 1/2 of recipe.

Exchanges Per Serving: 2 1/2 Starch, 1/2 Fat.
