1 qt to 2 quarts peanut or canola oil,, for frying

2 cup vinegar
1 cup vegetable oil
3 carrots cut in slices
2 medium onions cut in slices
1 tbsp spices: bay leaf, oregano thyme, s, weet marjoram

Limonada (Mexican Limeade)
Ingredients:
1 cup lime juice, fresh-squeezed
1 water, to make 1/2 gal total
SIMPLE SYRUP
2 cup sugar, white
1 cup water
Instructions:
Simple syrup: Combine the sugar and water in a saucepan, and heat
until it barely begins to boil. Remove from heat and cool.
Combine one cup of syrup and one cup of lime juice in a pitcher. Add
enough water to make up a half gallon. Serve over ice.

Ingredients:
8 fresh roasted and
1 peeled green chiles
1/2 cup grated mozzarella
1 cheese
2 medium fresh tomatoes,
1 finely chopped
Instructions:
1/2-1 ts garlic salt
Slit each chile and stuff with cheese and tomatoes. Sprinkle with
garlic salt. Place stuffed chiles, in single layer only, in 8" x 13"
baking dish. Bake at 350 degrees until cheese melts, about 10 - 15

Marinated Jalapenos-Ch
Ingredients:
1 whole jalapenos -- cut in
1 half,seeded
1 whole lime juice
1 lots salt
1 whole onion rings
Instructions:
Mix all ingredients and let sit for 5 minutes. Eat.
They are delicious. The lime and the salt gets rid of the hotness (if
can't still handle it cut them and put them is salt and water for 1-2
hours to remove some hotness before you put the lime).
