Sourdough Mexican Muffins

Ingredients:

MIX TOGETHER

1 3/4 cup all purpose flour,
2 tbsp sugar,
1/4 tsp salt,
1/8 tsp chili powder,
1/8 tsp baking soda, and
2 tsp baking powder.

IN SEPARATE BOWL MIX TOGETHE

1/2 cup sourdough starter,
1/3 cup milk,
1 egg, beaten,
1 can cream-style corn, (8 oz.)
1/4 cup cooking oil, or melted shortening,
1/2 cup grated cheddar cheese,
1 tbsp green chiles, chopped
2 tbsp pimiento, chopped and
2 slices of bacon, fried and crumbled, .

Sri Lanka Fried Chiles

Ingredients:

24 dried cayenne
1 or japone chiles
4 tbsp salt
1 qt water
1 oil

Instructions:

Make a brine from the salt and water. Soak the chiles for an hour in
the brine. Heat a good quantity of oil. When it's very hot, deep fry
the chiles until they are crisp. Drain, salt and serve.

This is the simplest way to fix dried chiles. I am told it is eaten
as a snack at movie theaters in Sri Lanka. Since I've never been

4 oz pkgs. garlic and herbs
1 cheese spread, room temp
3 tbsp shallots, minced
1/4 cup celery heart, minced
1 tbsp anaheim chile, minced

Ingredients:

1 10-oz package frozen
1 black-eyed peas
1/4 cup chopped sweet red pepper
1/4 cup chopped sweet green bell
1 pepper
1/4 cup chopped red onion
1 tbsp chopped fresh jalapeno

Ingredients:

3 tbsp dry taco seasoning mix
2 tsp crushed red peppers
2 tsp dry coriander
2 tsp garlic powder
8 cup crispix
1 cup corn chips
1 cup durkee french fried onions
3 tbsp oil

Combine taco seasoning mix and spices. Set aside. In a 2 gallon
storage bag, combine crispix, corn chips and onions. Pour oil over

Ingredients:

1 (12-inch) pizza dough
2 large tomatoes, diced
1 tbsp chopped jalapeno pepper
4 green onions, chopped
2 cloves garlic, minced
2 cup cheddar cheese, shredded
2 tbsp grated parmesan cheese
1 avocado, chopped
1/2 cup sour cream
1/4 cup chopped parsley
