24 won-ton wrappers
oil for frying
filling:
1/3 cup chopped walnuts
6 medjool dates, pitted -- coarsely chopped
3 tablespoons crystallized ginger -- chopped
1 tablespoon grated lemon rind
2 teaspoons butter -- softened[/code]

*The palm date is the one western cooks are familar with, the best of which are
the large, moist, sweet Medjool from California.

Combine filling ingredients and mix well. To make each wonton, place 1 tsp
filling in center of each wrapper; keep remaining wrappers covered. Brush
edges of wrapper with water and fold wrapper in half to form a triangle.
Pinch edges to seal. Pull the corners of the folded side together, moisten
one corner, press to seal. Keep finished wontons covered. Heat oil to 360 at
med-high heat. Deep fry until golden, turning occasionally, 2-3 min. Drain.
Serve hot or cold.
