1 cup of couscous
2 cups of boiling water
1 1/2 cups of frozen yellow corn
2 cups cooked black beans
1 small onion, chopped
a few sliced scallions
about 16 cherry tomatoes, halved
4 cloves of garlic, minced
1/2 of a habenero pepper, minced
fresh cilentro leaves - I used lots, at least 1/2 cup
salt, cumin and rice vinegar to taste

Put the couscous in a large bowl. Pour the 2 cups of boiling water over
it. Cover the bowl. When the couscous has absorbed the water (about
20 mins.),

1 can (15 oz.) black beans
1 small can sliced water chestnuts (8 oz.)
1/2 cup frozen kernel corn
1/2 cup sliced red and green bell pepper
handful of bulghur wheat (coarse-grind)
1 tsp water-pack chopped garlic
1 tsp (scant) chili pepper
dash of mustard powder

Fluff bulghur in water. Mix all ingredients; warm through to blend
flavors and thaw.

NOTES:
This was good, but would be better with less water chestnuts.
Nice blend of flavors and textures.
