Yeast Appam

Ingredients:

Rice flour (sifted) - 3 cups
Yeast - 1 tsp
Sugar - 1 tsp (for fermenting yeast)
Warm water - ¾ cup
Semolina - ¼ cup
Water - 1 cup
Sugar - 1 tbsp
Salt - to taste
Milk - ½ cup

Instructions:

Combine the yeast, sugar and warm water - keep aside.

Mix the semolina and water - keep aside.

When the yeast has risen, add to the rice flour and semolina mix.

Add the milk, sugar and salt to taste.

Leave the batter for 6 hours.

If the batter is too thick add just enough water.

Heat the appam tawa.

Grease with cooking oil.

Pour laddle full batter into the tawa. Swirl the tawa to evenly spread the batter and get a round shape.

Close lid and cook. Do not turn the other side (like making a dosa). The appam should be frilly on the edges and spongy in the middle.
