Cheese Toast

Ingredients:

Green chilli - 1 or 2
Onions - 1 - finely chopped
Plain flour - 1 tbsp
Butter or cooking oil - for toasting
Pepper powder - to taste
Mustard powder - to taste
Salt - to taste
Cheese - 100 g
Milk - ¼ cup
Bread toast slices

Instructions:

Warm the milk and mix it with the grated cheese.

Add the chopped greenchillies, onions, plain flour, mustard powder, pepper powder and salt.

Spreadthe mixture over one side of the bread slices.

Mock Pizza

Ingredients:

Bread slices - 6
Tomato sauce - 6 tbsp
Grated cheese - 6 tbsp
Pepper - to taste
Grated onion - 2 tsp
Melted butter - 1 tbsp

Instructions:

Spread each bread slice with 1 tbsp tomato sauce.

Make a mixture with cheese, grated onion and pepper.

Place 1 tbsp of this mixture on top of each bread slice.

Brush a little melted butter on top.

Bake at 200°C for 10 minutes or until golden and the cheese bubbles.

Pancakes

Ingredients:

Flour - 1 cup
Salt - 1 pinch
Egg - 1
Sugar - 2 tsp
Milk - 1¼ cups
Baking powder - ½ tsp
Cooking oil - to grease fry pan
Honey, maple syrup or cream - 2 serve with the pancakes

Instructions:

Sift flour, salt, sugar and baking powder into a mixing bowl.

Add egg and milk.

Whisk until smooth.

Keep aside for 1 hour.

Gently heat a lightly greased 20cm fry pan.

Vattayappam

Ingredients:

Rice flour (sifted) - ½ kg
Coconut - 1
Cardamom powder - 2 tsp
Cumin seeds - ½ tsp
Sugar - ¼ kg
Coconut water - 1 cup
Salt - to taste

Instructions:

Mix the rice flour and coconut water.

Grate and then grind the coconut to a fine paste.

Add the coconut paste, cumin seeds, cardamom powder, sugar and salt to the flour mixture - leave for 5 to 6 hours.

Pour into desired moulds and steam in a steamer for 7 to 8 minutes until done.

Ingredients:

Raw rice - 1 kg
Grated Coconut - 1 cup
Coconut water - 4 cups
Sugar - 2 tbsp
Baking powder - 1 tsp
Baking soda - 1 tsp
Salt - to taste

Instructions:

Soak the rice in water for 5 hours.

Grind the rice with the grated coconut to a smooth paste adding coconut water.

Add sugar, baking powder, baking soda and salt - leave the batter overnight to rise.

If the batter is too thick add just enough water.

Ingredients:

Rice flour (sifted) - 3 cups
Yeast - 1 tsp
Sugar - 1 tsp (for fermenting yeast)
Warm water - ¾ cup
Semolina - ¼ cup
Water - 1 cup
Sugar - 1 tbsp
Salt - to taste
Milk - ½ cup

Instructions:

Combine the yeast, sugar and warm water - keep aside.

Mix the semolina and water - keep aside.

When the yeast has risen, add to the rice flour and semolina mix.

Add the milk, sugar and salt to taste.

Leave the batter for 6 hours.
