Banana Bars

Title: Banana Bars

Yield: 32 servings

2 c All-purpose flour; sifted
2 ts Baking powder
1/2 ts Salt
1/4 c Shortening
1 c Granulated sugar
2 Eggs
1 c Mashed bananas
1/2 ts Lemon extract
1/2 ts Vanilla extract
1/2 c Chopped nuts
Powdered sugar frosting

Preheat oven to 350 degrees; grease an 8 x 13-inch baking pan. Sift
together the flour, baking powder and salt. Cream together the shortening
and sugar; add the eggs, beating well. Add the dry ingredients alternately
with the mashed bananas. Add the lemon and vanilla extracts and the nuts;
beat thoroughly. Spread the batter in the prepared pan and bake for 30
minutes. While still warm, frost with a thin powdered sugar frosting. When
cool, cut into bars or squares. Variation. Banana Drop Cookies: Drop the
dough by teaspoonfuls onto greased cookie sheets and bake for 12 to 15
minutes at 350 degrees.
Makes 4 dozen.
